3drops sits at Mount Barker, in the heart of Western Australia's Great Southern. Founded by Joanne Bradbury on the family farm where she grew up, it planted vines and olives in 1998 and released its first wine in 2001. The estate farms 15 hectares at Wragg Road and 6 hectares at Patterson's, with Riesling, Sauvignon Blanc, Chardonnay and Pinot Noir performing strongly, plus olive groves of Italian, Greek and Spanish varieties irrigated from the property's wetlands — one drop of wine, one of olive oil, one of water, the three drops behind the name.

Centare Vineyard sits at Wurundjeri in Victoria's Yarra Valley, an area listed on the Victorian Heritage Register, with vines first planted in 1998. The estate was formally founded in 2018 after Chinese owner Simon Li acquired the property, with Nicole Esdaile as winemaker. It keeps about two hectares of own-rooted, single-block Chardonnay I10V5, Shiraz PT23 and Cabernet Sauvignon SA125, bottled as the Old Block series. From 2021 it began a four-hectare high-density planting of 10,000 vines per hectare, a rare approach in Australia.

Cullen was founded in Margaret River in 1966 by Kevin John and Diana Madeline Cullen, who planted their first 17 hectares as an experimental vineyard in 1971. Certified organic in 1993 and fully biodynamic from 2003, it was Australia's first recognised carbon-neutral vineyard. Cabernet is the cornerstone, and Diana Madeline Cabernet Merlot entered the Langton's Classification at Exceptional in 2005.

It is one of the few small estates locally with its own bottling line.

Domaine A was founded in 1973 by H. Peter and Ruth Althaus in Tasmania's Coal River Valley, on the Stoney Vineyard — the oldest in the district. Abundant sunshine, a cool climate and soils two hundred million years in the making shape the fruit. Jancis Robinson calls it a Landmark Wine of Australia, and Anthony Foster, former president of the Institute of Masters of Wine, placed it among the very top wines of the world. Ron and Elva Laughton founded Jasper Hill in Heathcote, Victoria, in 1979, naming its two vineyards after their daughters: Emily's Paddock and Georgia's Paddock. Two wines sit in the Langton's Classification at Outstanding, and Georgia's Paddock Shiraz was named No. 20 in Wine Spectator's 2018 Top 100 — the highest-placed Australian wine that year. Fei Tswei sits in the core of the eastern foothills of the Helan Mountain in Ningxia, on Farm No. 3 of the Huangyangtan state farm in Yongning County. A Grade IV classified winery of the Helan Mountain's Eastern Foothills wine region, it is built to organic eco-community standards. The 100-mu winery is backed by 1,200 mu of estate vineyard, plus 56 mu of experimental plantings and 20 mu of compost, growing 11 commercial and 26 trial varieties across 17 blocks defined by variety and microclimate. Named after jade, it is built on awe for, respect for, and repayment of the land.

Xiaopu began in 2017, founded by former sommelier and wine educator Ian Dai, among the first winemaking projects in China started by a sommelier. The original aim was to make Ningxia terroir wine in the plainest, most traditional way, with nothing added; from there came the orange-wine label Jumeng Project, the limited experimental rebel's league, Domaine de la Gyalthang in Shangri-La, Yunnan, and red, white and apple-pear wines from Huailai and Qinhuangdao.

In 2015 winemaker Quan Shiping walked the Hengduan Mountains, from the Jinsha to the Lancang, from Baima to Meili Snow Mountain, and glimpsed the makings of a world-class terroir — high altitude, pure snowmelt, complex terrain, mineral soils and sharp diurnal swings. Through meticulous farming and winemaking it compresses landscape, climate, human warmth and time into a wine you can taste.
